PURPLE SWEET POTATO FILLING

- 130 g instant purple sweet potato flour
- Pandan leaf extract
- 85 g sugar
- 1½ tbs glutinous rice flour
- ½ tsp salt
- 30 g oil
- Vanilla essence (optional)
Methods:
- Pandan leaf extract: blend 4 pandan leaves with 450 ml of water, strain
- Add instant purple sweet potato flour, pandan leaf extract and glutinous rice flour, mix well
- Strain the mixture to make the texture smooth and soft
- Add sugar, salt, oil and vanilla essence into the mixture
- Heat the mixture over medium heat for ±15 minutes, stir constantly
