PURPLE SWEET POTATO FILLING



Ingredients:
  • 130 g instant purple sweet potato flour
  • Pandan leaf extract
  • 85 g sugar
  • 1½ tbs glutinous rice flour
  • ½ tsp salt
  • 30 g oil
  • Vanilla essence (optional)
 
Methods:
  1. Pandan leaf extract: blend 4 pandan leaves with 450 ml of water, strain
  2. Add instant purple sweet potato flour, pandan leaf extract and glutinous rice flour, mix well
  3. Strain the mixture to make the texture smooth and soft
  4. Add sugar, salt, oil and vanilla essence into the mixture
  5. Heat the mixture over medium heat for ±15 minutes, stir constantly
