PURPLE SWEET POTATO COOKIES



Ingredients:
  • 50 g instant purple sweet potato flour
  • 125 g margarine
  • 20 g almond powder
  • 50 g corn starch
  • 100 g all purpose flour
  • 40 g refined sugar
  • 1 egg yolk
 
Methods:
  1. Beat sugar and margarine in a stand mixture for 1 minute on high speed
  2. Add egg yolk, mix for 30 seconds on high speed
  3. Add instant flour, mix for 30 seconds on slow speed
  4. Add corn starch and all purpose flour, mix on slow speed for 1 minute until well combined
  5. Preheat the oven to 160° C
  6. Shape and place the cookie dough in baking pan lined with baking sheet
  7. Bake cookies for 20 minutes
