PURPLE SWEET POTATO COOKIES

- 50 g instant purple sweet potato flour
- 125 g margarine
- 20 g almond powder
- 50 g corn starch
- 100 g all purpose flour
- 40 g refined sugar
- 1 egg yolk
Methods:
- Beat sugar and margarine in a stand mixture for 1 minute on high speed
- Add egg yolk, mix for 30 seconds on high speed
- Add instant flour, mix for 30 seconds on slow speed
- Add corn starch and all purpose flour, mix on slow speed for 1 minute until well combined
- Preheat the oven to 160° C
- Shape and place the cookie dough in baking pan lined with baking sheet
- Bake cookies for 20 minutes
