MUSHROOM MARTABAK


* Serves 15 pieces


Ingredients:
  • 100 g shiitake, minced
  • 100 g oyster mushrooms, minced
  • 50 g onion, minced
  • 25 g spring onion, finely sliced
  • 25 g celery, finely sliced
  • 1 chicken egg
  • 1 duck egg
  • 4 tsp umamitake chicken
  • 15 lumpia | egg roll skins
  • Salt and pepper, to taste
  • Cooking oil
 
Sauce ingredients:
  • 200 ml water
  • 30 ml sweet soy sauce
  • 2 tbs tamarind sauce
  • 25 g chilli padis, sliced
  • ½ tomato, diced
  • ½ onion, sliced
  • ½ tsp salt
  • 25 g sugar
 
Methods:
  1. To make sauce: boil water, add sweet soy sauce, tamarind sauce, salt and sugar, bring to boil and set aside. Add tomato, onion and chilli padis into sauce mixture, mix well
  2. Fry onion until fragrant, add mushrooms, umamitake chicken, salt and pepper, mix well. Put aside and allow to cool
  3. Beat the eggs, add mushroom mixture, spring onion and celery, mix thoroughly
  4. Put 1 tbs of filling on the center of lumpia skin, fold in the sides and ends to completely enclosed the filling
  5. Fry until golden brown and serve with sauce
