MUSHROOM MARTABAK

* Serves 15 pieces

- 100 g shiitake, minced
- 100 g oyster mushrooms, minced
- 50 g onion, minced
- 25 g spring onion, finely sliced
- 25 g celery, finely sliced
- 1 chicken egg
- 1 duck egg
- 4 tsp umamitake chicken
- 15 lumpia | egg roll skins
- Salt and pepper, to taste
- Cooking oil
Sauce ingredients:
- 200 ml water
- 30 ml sweet soy sauce
- 2 tbs tamarind sauce
- 25 g chilli padis, sliced
- ½ tomato, diced
- ½ onion, sliced
- ½ tsp salt
- 25 g sugar
Methods:
- To make sauce: boil water, add sweet soy sauce, tamarind sauce, salt and sugar, bring to boil and set aside. Add tomato, onion and chilli padis into sauce mixture, mix well
- Fry onion until fragrant, add mushrooms, umamitake chicken, salt and pepper, mix well. Put aside and allow to cool
- Beat the eggs, add mushroom mixture, spring onion and celery, mix thoroughly
- Put 1 tbs of filling on the center of lumpia skin, fold in the sides and ends to completely enclosed the filling
- Fry until golden brown and serve with sauce
