Methods:
- 250 g oyster mushrooms
- 300 ml coconut milk
- Vegetable oil
- 2 kaffir lime leaves
- 1 bay leaf
- 1 lemongrass
- 1 tsp salt
- ½ tsp sugar
Spice ingredients:
- 3 chillis, seeds removed
- 3 cloves shallots
- 2 cloves garlic
- 2 candlenuts
- 5 slices galangal
- ½ tsp coriander
- ¼ tsp pepper
Methods:
- Finely ground spice ingredients, then fry them until fragrant
- Add bay leaf, kaffir lime leaves, lemongrass, salt and sugar
- Pour in coconut milk, continue stirring until it boils
- Add in mushrooms, cook until thickens and the oil rises
