WOKU CHICKEN

Ingredients:
- 250 g chicken
- 200 g red anaheim chilies
- 150 g bird eye chilies
- 50 g turmeric
- 10 g candlenut
- 10 g garlic
- 3 bay leaves
- 15 g ginger
- 5 kaffir lime leaves
- 50 g green onion
- 80 g basil
- Cooking oil
- 1 tsp salt
- 1 tsp pepper
- 2 tsp umamitake chicken
Methods:
- Finely blend anaheim chilies, bird eye chilies, turmeric, ginger, garlic, candlenuts and cooking oil
- Sauté bay leaves, kaffir lime leaves and lemongrass until fragrant. Add the blended spice paste
- Add chicken, pepper, salt and umamitake chicken, mix well
- Cook until chickens are fully cooked. Add basil leaves and green onions, stir until wilted
