SHIITAKE SOUP

* serves 3
Ingredients:
- 100 g fresh shiitake mushrooms without stalks, diced 1 cm
- 1 cake tofu, diced 1 cm
- 1 L water
- 2 tbs soy sauce
- 2 tbs miso
- 1 tbs spring onions, finely chopped
- 1 tbs shallot, finely chopped
Methods:
- Add miso to boiling water. Add remaining ingredients
- Serve hot
