PINEAPPLE FRIED RICE

* serves 4
Ingredients:
- 250 g oyster mushrooms, thinly sliced
- 1 pineapple, medium size
- 5 cloves shallots, sliced
- 2 tbs dried shrimps, chopped
- 3 cloves garlic, coarsely chopped
- 2 tbs fish sauce
- 1 tbs coriander leaves, finely chopped
- Sugar
- Salt
- 5 cups steamed rice
- 6 tbs oil
Methods:
- Cut the pineapple into half, lengthwise and scoop out the fruits. Cut the fruits into small chunks. Set aside the hollowed out pineapple
- Heat tablespoon of oil and fry dried shrimps until crispy. Set aside and drain
- Add 5 tablespoon of oil, fry garlic and shallots until they turn golden brown, add in mushrooms and rice, stir
- Add fish sauce, sugar and salt, stir for 1 minute. Add the fruits and fried dried shrimps, stir for another minute
- Pour the contents into the halved pineapple and serve. Garnish with fresh coriander leaves
