Shimeji Curry

Ingredients:
  • 200 g Oyster mushrooms, cut into quarters
  • 200 ml coconut milk
  • 1 kaffir lime leaf
  • 1 bay leaf
  • ½ tsp salt
  • ½ tsp sugar

Spice ingredients:
  • 4 shallots
  • 2 cloves garlic
  • 3 candlenuts
  • 2 red chillies
  • 1 cm ginger
  • 2 cm turmeric
  • 1 cm galangal
  • 1 stalk lemongrass
  • ½ tsp coriander
  • ¼ tsp pepper
  • 3 tbs cooking oil

Methods:
  1. Finely ground spice ingredients, then fry them until fragrant. Add in kaffir lime leaf, bay leaf, sugar and mushrooms, stir well
  2. Add coconut milk and salt, gently stir at the same time
  3. Cook until coconut milk comes to boil, remove and serve
