Schotel Mushrooms

Ingredients:
  • 300 g Oyster mushrooms, finely chopped
  • 100 g Wood Ear mushrooms, thinly sliced
  • 100 g Shiitake mushrooms, thinly sliced
  • 1 onion, minced
  • 3 cloves garlic, minced
  • 2 tomatoes, seeds removed and minced
  • 3 tbs tomato ketchup
  • 1 tbs chilli sauce
  • 4 eggs
  • 3 tbs vegetable oil
  • Salt and pepper, to taste
  • 2 tsp sugar

Sauce ingredients:
  • 2 tbs margarine/butter
  • 100 g flour
  • 400 ml milk
  • 50 g grated cheese
  • Extra grated cheese, for topping

Methods to make sauce:
  1. Melt margarine/butter, add in flour, stir well
  2. Add milk a little at a time, stirring well between each addition
  3. Add in 50 g grated cheese, mix well, remove and set aside

Methods:
  1. Fry garlic and onion with vegetable oil until fragrant
  2. Add in mushrooms, tomatoes, ketchup, chilli sauce, salt, pepper and sugar, mix well, remove and allow to cool
  3. Beat eggs, combine with mushroom mixture, set aside
  4. Coat baking pan with margarine/butter, pour first ½ mushrooms mixture then ½ sauce mixture, repeat layering process
  5. Sprinkle schotel with grated cheese on top, bake until golden
